So it looks now after changing everything as you both said. So thank you for this.
As you can see, it is in the near perfect, objects farer away are not. But I think, this is, how it works. The monitors are exactly 45 degrees and I've changed to a FOV of 45. You were right, my camera faces down so I put it up again. Tried a bit more, but this doesn't make it better.
My TrackIR is covered with dust. I don't want to install it again so I think I have to look for buttons left /right looking.

After that photo I took the left monitor off my rig and on again so it's nearer and absolutely perfect aligned. The space between the monitors are now covered from behind. Made a new picture but with a racing simulator. So you can see the enhancement.
If there's something to make better, please tell me.

Regards,
Dennis

@FormelLMS

Quick question, are you changing the FOV through the in-game seat adjustment menu, or the multimon_config.sii file? They can give different results, make sure you're using the FOV override in the multimon config file. I ask because when my setup is set to 45° FOV and monitor angle, I cannot see the right side mirror without turning my view. If you set it the same way I did, it should be the same for you. Although it could just be the mirror position of your truck.

Also, did you see my recent post on finding the mathematically correct FOV? There's stuff there that could help you to find the right settings. Link: viewtopic.php?f=23&t=2125
For your setup, I would try the procedure for "matching perpendicular multi-view". However, since your monitors are curved, there will be a bit of distortion. Not much you can do about that.

I'm actually working on a way to mitigate the problem of not being able to see the dashboard. Basically, your normal correct eye level is the center of the screen. By using frustum subrect, I can shift the center of projection upwards to reveal more stuff below. It should look correct, as long as you raise your eye level too (raise your sitting height). I already have it working for any perpendicular setup, I just have to figure it out for non-perpendicular ones. If you're interested, let me know and I can tell you how to set it up.

By the way, I really like your sim rig, looks awesome!

The settings in config.cfg is correctly set to get a stable, constant FPS=30, so if you don't
get that, but instead get varying FPS above that, you must have set some other Frame
Rate Limiter too, hence getting competing limiters. If that is the case, for us to see if that
is the case I would like you to take as many screenshots of NPI as needed to show all settings
and the same with NCP settings for 3D-settings for the game. Zip them all together and post
them here.

@DedaToro

You didn't answer my embedded question whether you with the settings you posted now, get
a FPS below or equal to 30 all the time, never above 30! Do you?

@BenganJ

With my settings, I can get fps above 30 but the fps still falls below 30.
I think it's not consistent.

@DedaToro

But that's the problem, that you get FPS ABOVE 30, NOT that you get BELOW 30.
There's something fishy here! I'll be back!

@DedaToro

Are you using a Freesync or G-Sync monitor?

@BenganJ

My monitor doesn't support both.
My monitor is Dell S2340L.

Half sync but fps above may be cause by:

NPI - Tear control - Adaptive <-- set to the default (standard).
