@JHTrucker

Here's what I got as response on SCS forum:

Thanks for all of your help Bengan J.

I don't want to disable Nvidia surround because every time I want to use all three monitors (which is a lot of my gaming) I would have to set it up again.

I used all of the recommended settings for game , NVI and multimon config posted at the link you provided. I did get the AA working , I noticed that I had an old .nip file that had a different AA compatibility code previously mentioned in this thread. Once I discovered this and changed it to the current recommendation , no problems.

I used the 3 monitor multimon_config , set FOV to 00.000 and adjusted in game.

In game I disabled SMAA , set scaling to 100% etc as directed. I set the in game res to 7680 X 1440 just to check that the AA was working now , it was OK and on all three monitors but frame rate was down to 30 fps or lower. I then set in game res to 2560 X 1440 , the game renders on the centre screen but at one ninth of the screen size. That is , one third as high and one third as wide as the centre monitor , set in the centre.

I will check this thread again some time in the future and maybe try again. Until then , I have saved the .nip file and returned everything to default. To be honest , 400% and SMAA at ultra on a 1440 32" monitor isn't all that bad :)

Thanks

@BenganJ
So didn't want to TEST with nvidia surround off just to check if AA worked, anyway...

Used the triple AA and all worked... but then choose to use a single screen but kept the triple.AA file?
Use the correct multimon_config.sii file to suit your setup.
Or after messing with in game resolution and the menu screen goes small, keep changes, just exit and restart game and it'll be back to full screen.

Also, can you add a note to first post because of post on steam:
I'm trying to do this with ETS 2 after reinstalling it. I was able to get it all working with ATS but the config file is actually called 'config.cfg', not global cfg...or am I missing a file somewhere? Is this file the same one used for ETS 2? I cannot find any file matching that description. I haven't run the game yet, do I need to do that first?

Change:
Step 3: Edit the following lines in that global config.cfg file like the following:
Note: The game needs you have run at least once to generate this file. <---ADD THIS ?

To avoid confusion, there is no "global config" file as such, there is a "global controls" file which is of NO interest to us in this thread here. The configuration file used by most people which needs to be modified with the values specified in first page is the so called "config.cfg" located for majority of people in the Documents folder, sub folder Euro Truck Simulator 2 and/or American Truck Simulator.

@JHTrucker & @black-coffee

The reason I always point out to edit the global config.cfg file is that EVERY profile has its
own config.cfg too!!!

I'll edit Step 3! EDIT: DONE!

I know about both, i have no issue with "global"... just file doesn't exist until game has run once.

Sorry, my fingers typed more than was needed in the note...
Note: The game needs >>>>you<<<< to have run at least once to generate this file.
remove "you".

@BenganJ - I've sneaked back...

Q - When i change in game resolution the menu goes tiny in middle of screen.
A - Just accept the change and then exit game and restart. Menu will now stay fullscreen.
This can happen when changing resolutions, so no need to keep doing this once set.

And... You can't help people that don't want help...
"To be honest , 400% and SMAA at ultra on a 1440 32" monitor isn't all that bad."
And that's why SCS won't bother to implement proper AA... or will they????

Can you at least copy the Q&A above to that scs post in case he really wants a proper image for his GTX1080 single screen setup.

Thanks.
